Tasty Kenya Food Dishes for You
You will find an interesting variety of Kenya food when you come to Kenya because the culture is so diverse. Some dishes are particular to a given region or community while certain staple dishes, like Ugali, are enjoyed by Kenyans everywhere.

Ugali
Many Kenya food dishes are served with Ugali, and Kenyans depend on this popular staple to make their meal complete. It’s made from maize flour and water with a little salt. You simply boil the maize in water, much like oatmeal or grits, until it reaches a stiff consistency. Serve with anything, but it’s especially good with fresh fish which is abundant in Kenya due its proximity to the coast and to Lake Victoria.
Githeri
A traditional dish with the Kikuyu people, this delicious Kenya food is a hearty stew made from maize, beans and sometimes kale or potatoes. The addition of meat makes Githeri a complete meal. Here is a recipe:
Soak a cup of your favourite beans (white beans, kidney beans or similar) in a pot of cold water overnight. Rinse the beans and add a cup of whole kernel corn. Add to a pot and cover with water and boil for a couple of hours until the mixture is tender, but not too mushy. Season with a little olive oil and salt to taste.
Irio
This is a mashed version of Githeri. Use the recipe above for basic Githeri, and when cooked, mash it with bananas or cooked potatoes. This Kenya food staple is also known as Mukimo or Kienyeji. You can substitute or add dried peas or lima beans to the corn and beans, and add onion and spinach to the mixture as well if you would like more flavour. Serve with skewers of grilled or barbecued meat.
